Why is it… that when I’m on Pinterest I feel like I’m Betty Crocker; but when it’s actually time to make dinner I feel like anything but. Right!? I can’t be the only one. So, dinner struggles have been abounding these last few weeks. It’s as if when I’m walking the aisles of Publix, I have ZERO recollection of the mental meal plan I made hours earlier. Luckily, Kent doesn’t have a gourmet palate that demands delicious, exotic foods. I kinda stick to zoodles & meatballs, chicken & pasta, roasted veggies, etc. and he doesn’t mind.

I’ve resolved to cook more often and post pictures to hold myself accountable. This weekend’s meals:


Enchiladas: shredded chicken mixed with cheese and salsa, baked at 350 until melty & crispy.

Pioneer Woman’s broccoli cheddar soup.

Banana muffins.
